Curry Rice with Shrimp

Ingredients (for 1 person)

1/4 cup brown rice, cooked
2 Tablespoons onions
2 Tablespoons peppers
1/2 teaspoon coconut oil
1 teaspoon garlic powder
4 ounces shrimp, raw
1 teaspoon curry powder
1/2 cup vegetable broth
1 dash of salt and pepper
1 splash lemon juice
2 teaspoons tomato paste
2 Tablespoons peanuts
1/2 cup grapes, red or green

Preparation:

  1. Prepare rice per package directions.
  2. Chop vegetables; set aside.
  3. Heat the oil in a saucepan over medium heat. Add the onions and garlic. Cook 2-3 minutes.
  4. Add the vegetables, shrimp, and curry powder. Stir to combine. Pour in broth. Season with salt, pepper, lemon juice, and tomato paste.
  5. Add rice to the pan. Mix well.
  6. Sprinkle with peanuts and serve alongside grapes.
