Caprese Salad

Ingredients (for 1 person)

4 slices tomatoes
1 ounce mozzarella, fresh
1 Tablespoon balsamic vinegar
1 pinches of pepper
2 Tablespoons basil, fresh
1 cup mixed greens
? cup cucumbers
1 Tablespoon walnuts, chopped
2 teaspoons cranberries, dried
2 Tablespoons red wine vinaigrette, fat-free
1 small slice of sourdough bread

Preparation:

Place tomatoes on a plate. Top with thinly sliced mozzarella, balsamic, fresh ground pepper, and basil.
Combine mixed greens, cucumber, walnuts, cranberries, and dressing in a bowl.
Serve with sourdough bread.
