Ingredients (for 1 person)
2 ounces whole-wheat pasta, ziti, dry
1/4 cup ricotta cheese, part-skim
1 dashes nutmeg
1 dash of salt and pepper
1 pinch of oregano
1 Tablespoon egg substitute
1/4 cup tomato sauce
3 Tablespoons mozzarella, part skim milk
Preparation:
- Pre-heat oven top 375 degrees F.
- Prepare pasta until al dente.
- Mix ricotta cheese with nutmeg, salt, pepper, oregano, and egg substitute. Fold in tomato sauce.
- Mix cheese mixture into pasta.
- Pour into a small baking dish and top with mozzarella.
- Bake in the oven for 30 minutes or until cheese on top is brown and bubbling.
