Asian Tofu Veggie Stir Fry

Ingredients (for 1 person)

3 ounces tofu, extra firm
1/2 cup white rice, cooked
2 small (each) spring onions (scallions)
2 teaspoons sesame oil
2 teaspoon soy sauce
1 Tablespoon rice vinegar
1 teaspoon garlic, chopped
1 teaspoon ginger, fresh
Pinch black pepper, ground
1/2 (Each) red bell pepper
1/2 (Each) red bell pepper
1 small (each) onion, yellow

Preparation:

  1. Dry the tofu with a towel to improve the texture, cut it into cubes. Set aside.
  2. Slice spring onions and combine with olive oil, soy sauce, vinegar, garlic, ginger, and pepper.
  3. Marinate tofu in this mixture for 10 minutes.
  4. Cook rice per package directions.
  5. Slice peppers and onion in thin strips.
  6. Remove tofu from marinade and reserve marinade.
  7. Sautee vegetables in a skillet with marinade. Add in tofu.
  8. Continue to cook for an additional 10 minutes.
  9. Serve over rice.
