Ingredients (for 1 person)
3 ounces tofu, extra firm
1/2 cup white rice, cooked
2 small (each) spring onions (scallions)
2 teaspoons sesame oil
2 teaspoon soy sauce
1 Tablespoon rice vinegar
1 teaspoon garlic, chopped
1 teaspoon ginger, fresh
Pinch black pepper, ground
1/2 (Each) red bell pepper
1/2 (Each) red bell pepper
1 small (each) onion, yellow
Preparation:
- Dry the tofu with a towel to improve the texture, cut it into cubes. Set aside.
- Slice spring onions and combine with olive oil, soy sauce, vinegar, garlic, ginger, and pepper.
- Marinate tofu in this mixture for 10 minutes.
- Cook rice per package directions.
- Slice peppers and onion in thin strips.
- Remove tofu from marinade and reserve marinade.
- Sautee vegetables in a skillet with marinade. Add in tofu.
- Continue to cook for an additional 10 minutes.
- Serve over rice.
