Ingredients (for 1 person)
1/4 cup brown rice, cooked
2 Tablespoons onions
2 Tablespoons peppers
1/2 teaspoon coconut oil
1 teaspoon garlic powder
4 ounces shrimp, raw
1 teaspoon curry powder
1/2 cup vegetable broth
1 dash of salt and pepper
1 splash lemon juice
2 teaspoons tomato paste
2 Tablespoons peanuts
1/2 cup grapes, red or green
Preparation:
- Prepare rice per package directions.
- Chop vegetables; set aside.
- Heat the oil in a saucepan over medium heat. Add the onions and garlic. Cook 2-3 minutes.
- Add the vegetables, shrimp, and curry powder. Stir to combine. Pour in broth. Season with salt, pepper, lemon juice, and tomato paste.
- Add rice to the pan. Mix well.
- Sprinkle with peanuts and serve alongside grapes.
